We are all outsourcing our health!: Dr Rupa Shah at a monthly health workshop held in Andheri West.
Luke warm water was passed around for participants touch to understand the right temperature for yeast to be activated for making healthy breads.
At each stage of the bread making, the pans were passed on to the audience to check the texture, the rising levels and experience the fermenting aroma of the breads before they are put in the oven.
Interactive Participation
“What is the most important ingredient in the kitchen?” asked Dr Rupa to the participants.
“The stove?”
“Oven?”
“Salt?”
“Dough?”
These were the varied replies from the avid audience of 20+ participants, all keen to know what happens next.
“Love, your mood, your attitude or your emotions”, these are the key ingredients, revealed the doctor. These elements make a difference to the value to give to your cooking and how the dish finally turns out.
The audience was actively involved in the various stages of bread formation and a few came forward to help twist the bread into creative shapes.
Best Spices For Cooking
“Food has memory; it absorbs our emotions, thoughts and feelings”, stated Dr Shah. “Bread making is about being patient—it’s all about time—about the process.”
“Why do we knead the bread? For the gluten to be better activated or released.” Dr Rupa Shah went on to describe the no-kneed technique—the lazy person’s technique to making bread. She also pointed out that home-made breads are heavy, but sweet.
She also described the difference between baking soda and baking powder, in place of yeast, and the use of alternatives to yeast while making bread.
Dips & Jams
The second half of the workshop comprised Dulari Shah demonstrating the steps for making peanut dips and cashew spreads for bread. Charul Shah took over and explained how to make apple jam. The session ended with a healthy platter offered to all the participants.
